For many of us July marks the true beginning of summer. Where I live, in MD, it starts hot and humid and just gets hotter and humider (is that even a word). I don't want to cook and make the kitchen just as hot as the outside. I lose my motivation to cook good meals. I am already a drive thru sue, but summer is even worse. What is funny is that I have more time in the summer to actually make food. I'm a teacher and have summer off... I have unlimited time. However, the motivation is non existent. I feel lazier than ever in the summer. So what do I do about eating? I force myself to do as much prep first thing in the morning as I can (that is when I have most of my energy). I keep pancakes in the freezer and have those for breakfast (I will have to make a batch soon). I buy the large packs of chicken breast and cook them all at once and freeze them in sandwich bags. Thaw and heat for lunch. Then add simple veggies (frozen to oven and just wait, no prep really). Dinner is anything from a smoothie (because after an evening workout I do not want anything heavy) to steak on the grill. Again, I try to keep things super simple. Meat, veggies, salad. I also keep homemade ice cream in the freezer (that is super simple to make as well and I make it first thing in the morning). Eating well doesn't have to be impossible. I make it look easier on the outside than it is on the inside, believe me on that.
